Confession time: so by the time I finally got around to photographing these veggie corn dogs and writing this post last week, there was only one left. ONE. Apparently I had eaten all the others without realizing it (okay, I definitely realized where this was going and liked them too much to care), so that’s why there is a single veggie corn dog in these photos…

Growing up, I loved corn dogs. They hold a special place in my heart because whenever my mom and I went clothes shopping at the mall, we would always stop by the food court stands and buy two corn dogs, plus a big cup of freshly squeezed lemonade to share. Since transitioning to a 95% vegetarian lifestyle a few years ago, I began searching for alternative options that would fit the bill, but nothing seemed to stick (ha ha, get it?). Believe it or not, it’s hard to find a veggie corn dog that can stand on its own two feet! Er, wooden popsicle stick.

I don’t care whether you’re vegetarian or vegan or pescatarian or an avid meat-eater–whatever you are, these veggie corn dogs are it. One of my favorite things about being a food blogger is getting asked to try new foods and rambling on about my favorite ones endlessly. The corn breading and veggie hot dog in the center are so on point!

Ramble ramble ramble.

I LOVE THESE VEGGIE CORN DOGS.

I personally can’t tell the difference between these and the original–if anything, these taste ten times better because they’re so light and don’t weigh me down after I devour one! Or two. Or four. Possibly right before swim practice.

In other news, haaaave you met this tomato bisque?

After I devoured four my first corn dog, inspiration struck. The flavors reminded me vaguely of grilled cheese (don’t ask me why–my taste buds are bizarre), and that made me think of grilled cheese & tomato bisque, which is one of my very favorite comfort food combos. I had the night off and decided to spend it trying my hand at whipping up a pot! I needed a can of tomatoes–and yes, to buy a second pack of these veggie corn dogs–so I dropped by Target and drooled for a while in front of this gorgeous display (say hello to my obsessive-compulsive side):

60 minutes later, I was back home, a big vat of tomato and creamy goodness was bubbling happily away in my kitchen, and I was giving myself a self-high five for a job well done as I reached for my erm, third veggie corn dog and dipped it straight into the pot.

It’s no grilled cheese but ERMIGOD MOVE ASIDE, IT’S SO GOOD.

Tomato bisque is, contrary to its fancy-sounding name, ridiculously easy to make. If you can throw together a can of crushed tomatoes, vegetable stock, some cream, and not burn down your house, then you are officially certified to make your own tomato bisque at home.

If you’re weird like me, you can even cut up your veggie corn dog into little bits and turn them into bites to enjoy with your soup. I don’t even care how you decide to consume this bisque–if you need a wingman to your next meal, make this!!

Vegetarian Tomato Bisque + Veggie Corn Dogs

Vegetarian Tomato Bisque + Veggie Corn Dogs

This tomato bisque is the ultimate fall comfort food--and it's so easy to whip up! Just a few ingredients and 30 minutes will give you the perfect soup with which to enjoy a MorningStar Farms veggie corn dog.

Ingredients

  • 1 (28 oz.) can crushed peeled tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Heat tomatoes and broth in a medium saucepan over medium heat.
  2. Bring to a boil, then stir in heavy cream and reduce to a simmer. Continue to simmer for 20-30 minutes, stirring occasionally.
  3. Once soup has thickened a bit, transfer to blender and puree until smooth.
  4. Serve with a side of veggie corn dogs!

  3. I have never made tomato bisque before, and I totally have to do it now, especially since it seems so simple. And I love Morningstar Farms products but I have never had their corn dog, and I soo want some now.

  5. Veggie corn dogs … whaaaaat? Since when have they been a thing? I would MUCH prefer them to the ‘meat’ version. And tomato bisque – YES PLEASE! 🙂
