It’s clear what kind of a spinster I will be: not an old batty cat lady (I’m allergic to cats), but a decrepit little woman who bakes Coconut Rum Blondies at 4 AM after finishing a terrible Ginnifer Goodwin rom-com alone on my couch.
On the bright side, there are worse things. For example, I could be an old hag who runs around on her neighbor’s lawns scattering apple tree seeds and shouting at the top of my voice: “The British are coming! The British are coming!”
Or I could be without these blondies, and that’d be a crying shame, don’t you think?
Thankfully, a few nights ago I was chatting with one of my best friends and unofficial psychotherapist H, who finally talked me out of my three-week shlump. To celebrate my release from the fetters of romantic comedy films, I decided to start a dedicated Me-Time journal for the next 21 days, where I can write my scattered thoughts about the day’s events. However, it’s only Day 1 and I’ve already filled 8 pages with musings on life! Who knew anything actually buzzed in this tiny brain of mine, right?
One thing I realized over the course of those eight pages was that a) I’ve actually had a really amazing week, and b) I love the feeling of meeting and keeping in touch with new people. There’s something incredibly liberating about getting to know someone who has no preconceptions about who you are except what you show them while you’re chatting–in the past 3 days alone, I’ve met & become (at least Facebook) friends with 2 folks in Starbucks, 2 guys from an international siblings program, and at least a handful of really wonderful people from my friend J’s recent PhD graduation party.

I also find that life is so much sweeter when you’re singing a tune like Jason Mraz and Colbie Caillat’s “Lucky”: Lucky I’m in love with my best friend, lucky to have been where I have been, lucky to be coming home again.
Attitude means everything. I know I’ve been griping a lot lately here about being down in the dumps (cough entitled cough), but diving into this week with its farmer’s market and coffee shop outings and Halloween party and get-togethers with a bright smile was honestly the best thing that could have happened.
Attitude, and these blondies, because there is nothing like a guaranteed baking success to get you in the mood to forge great relationships in the wide world.
My dear friend E has been asking me on behalf of her mom for a really good blondie recipe. I’ve made some killer blondies such as these amazing Biscoff/Cookie Butter Blondies,but for the normal person who doesn’t keep 10 jars of cookie butter stocked in her cabinet at all times, this blondie recipe is the absolute BEST–incredibly chewy and infinitely adaptable. (The photographs here are actually of those Coconut Rum Blondies I mentioned from my Etsy shop, but the base is really similar and this blondie base looks identical.)

The Best Blondies for #SundaySupper
A killer blondie recipe, adaptable for all your blondie needs. Incredibly chewy and easy to whip up for a last-minute party! Mix in anything you want--chocolate chips, chopped Oreos, M&M's--and you have a tasty hit every time!
Ingredients
- 1/2 cup butter or margarine, melted
- 1 cup dark brown sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2/3 cup white chocolate chips or other chocolate chips
- Additional mix-ins of your choice (M&M's, chopped Oreos, coconut flakes)
Instructions
- Preheat oven to 350 degrees F. Lightly grease an 8x8-inch or 9x9-inch baking pan and set aside.
- In a large mixing bowl, cream together melted butter and brown sugar.
- Mix in egg and vanilla.
- Add flour, salt, and baking soda. Gently fold into wet ingredients until just incorporated.
- Fold in chocolate chips and any additional mix-ins.
- Pour batter evenly into prepared pan. Bake for 17-23 minutes, until a toothpick inserted in center comes out fairly clean with moist crumbs clinging to it. Remove to stovetop and allow to cool completely before cutting into squares. Enjoy immensely!

Oh my gosh, yum! Blondies come in second to brownies only because I’m majorly addicted to chocolate. They look like they’re loaded with so many ingredients!
So, the thing about diaries is that I can never update them. I don’t like talking about myself,which is funny since the blog is about me, but maybe it’s just weird talking to myself about my daily life. Which is why I used to only record major events. Then I thought it was worth it since the major events in my life are the ones I’ll probably always remember. Um, yeah. The complexity of me and a diary. lol. But! A few months ago, I participated in the 100 Happy Days challenge, where you take photos of one thing that makes you happy each day for 100 days. It really is amazing how picking out a single happy moment in your day makes a huge difference.
As for meeting people who don’t know who you are except what you tell them, I love that because it means I don’t have to worry about being judged, or if people think it’s out of character for me.
Now… I have to figure out when I’ll make these blondies or maybe I’ll just buy them from your shop and have you make them for me =)
omg, that 100 Happy Days Challenge sounds right up my alley! When where how can I sign up for this? I do the same thing through my Wall of Smiles–a post-it a day–but I’d love to participate with a community! Because yes, you’re right–I think the security of being with strangers is that I don’t have to worry about people thinking it’s out of character for me. That’s really well put, I’m going to write it down in my journal for a keepsake 😉
